Hearty cod and sweet potato salad

  • Olive oil - 10 ml (2 tsp)
  • Olives - 20 g
  • Lemon juice - 15 ml (1 tbsp)
  • Sweet potato - 100 g
  • Cod - 60 g
  • Carrot - 50 g
  • Bell pepper - 100 g
  • Lemon zest - 5 g (0.5 tsp)
  • Greens - 50 g
  • Mixed nuts - 10 g

How to make:

  1. Cut the carrots, bell peppers, sweet potatoes into large cubes, sprinkle with olive oil and bake the vegetables for 30 minutes at 350°F
  2. In another dish, bake the fish for 20 minutes
  3. Put the vegetables in a deep dish, top with boneless fish, herbs and olives
  4. Drizzle with oil and lemon juice, season with lemon zest if desired
  5. Sprinkle with pine nuts
