Ingredients:

  • Olive oil - 10 ml (2 tsp)
  • Olives - 30 g
  • Lemon juice - 15 ml (1 tbsp)
  • Sweet potato - 200 g
  • Cod - 100 g
  • Carrot - 50 g
  • Bell pepper - 100 g
  • Lemon zest - 5 g (0.5 tsp)
  • Herbs - 50 g
  • Mixed nuts - 15 g

How to make:

  1. Cut the carrots, bell peppers, and sweet potatoes into large cubes, sprinkle with olive oil and bake at 390°F for 30 minutes
  2. While the vegetables are being baked, bake the fish in another dish for 20 minutes
  3. Put the vegetables on the bottom of a deep dish, and top with the boneless fish. Add the olives and sprinkle with herbs
  4. Drizzle with oil and lemon juice, season with lemon zest if desired. Sprinkle with pine nuts
