Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Cherry tomato - 75 g (0.5 cup)
  • Lemon juice - 10 ml (2 tsp)
  • Cucumber - 150 g
  • Mint, chopped - 30 g (0.5 cup)
  • Parsley, finely chopped - 60 g (1 cup)
  • Hemp seeds - 60 g (0.5 cup)
  • Chicken breast, grilled - 90 g (1 whole)

How to make:

  1. Finely chop the parsley and mint. Chop the cherry tomatoes and chop or grate the cucumber
  2. Combine the vegetables and herbs with the shelled hemp seeds and mix well
  3. Add the dressing and serve with the chicken fillet
