Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Cherry tomato - 90 g (0.5 cup)
  • Lemon juice - 10 ml (2 tsp)
  • Parsley, chopped - 30 g (1 cup)
  • Cucumber - 30 g (0.3 whole)
  • Tofu - 100 g
  • Mint, chopped - 15 g (0.5 cup)
  • Hemp seeds - 140 g (1 cup)

How to make:

  1. Finely chop the parsley and mint, crumble the tofu
  2. Chop the cherry tomatoes and chop or grate the cucumber
  3. Combine all ingredients, add the dressing and mix well
