Ingredients:
- Olive oil - 30 ml (2 tbsp)
- Lemon juice - 25 ml (1.8 tbsp)
- Onion - 60 g (0.6 whole)
- Tomato - 130 g
- Mushroom - 100 g
- Quinoa, cooked - 140 g
- King prawn - 260 g
- Green salad - 200 g (4 cup)
How to make:
- Prepare the skewers, skin the king prawns, chop the mushrooms in half, cut the tomatoes and onion into large chunks
- Thread the vegetables and king prawns onto the skewers then place them under a medium grill for 10-15 minutes, turning halfway through
- Cook the quinoa with 2 parts salted water for 25 minutes. When almost cooked, remove from the heat and put the lid on the pan. Leave for 10 minutes, then fluff up with a fork and leave aside to cool slighly
- In a small bowl mix the olive oil and lemon juice
- Place the skewers on a plate with the salad and quinoa, and drizzle over the salad dressing
