- Lemon juice - 15 ml (1 tbsp)

- Red pepper - 130 g
- Feta cheese - 60 g
- Rocket - 20 g
- Chickpeas - 190 g
How to make:
- Drain the chickpeas, chop the tomato and red pepper, and finely chop the parsley
- Mix the olive oil and lemon jucie with salt and pepper in a small bowl
- Combine all salad ingredients in a large bowl and drizzle the dressing over
- Crumble over the feta cheese
