Ingredients:
- Olive oil - 15 ml (1 tbsp)
- Chives - 2 g (1 tsp)
- Lemon juice - 15 ml (1 tbsp)
- Garlic clove - 2 g (0.5 pcs)
- Mushroom - 70 g (1 cup)
- Pine nut - 20 g (2 tbsp)
- Edamame bean - 80 g (0.5 cup)
- Rocket salad - 200 g
How to make:
- Slice the mushrooms and place in a large bowl with the rocket, add beans
- In a separate bowl mix the olive oil and lemon juice
- Add the chopped chives and peeled and minced fresh garlic
- Pour the dressing over the salad and mix to combine
- Sprinkle over the pine nuts and serve
