Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Chives - 2 g (1 tsp)
  • Lemon juice - 15 ml (1 tbsp)
  • Garlic clove - 2 g (0.5 pcs)
  • Mushroom - 70 g (1 cup)
  • Pine nut - 20 g (2 tbsp)
  • Edamame bean - 80 g (0.5 cup)
  • Rocket salad - 200 g

How to make:

  1. Slice the mushrooms and place in a large bowl with the rocket, add beans
  2. In a separate bowl mix the olive oil and lemon juice
  3. Add the chopped chives and peeled and minced fresh garlic
  4. Pour the dressing over the salad and mix to combine
  5. Sprinkle over the pine nuts and serve
