Ingredients:
- Egg - 100 g (2 pcs)
- Spinach - 20 g
- Salt and pepper - 0.3 g (1 pinch)
- Tomato - 100 g (1 whole)
- Mixed herbs - 5 g (1 tbsp)
- Broccoli - 50 g
- Potato, boiled - 135 g
- Hard vegan cheese - 60 g
How to make:
- Scramble 2 eggs, add chopped tomato and spinach (5-8 leaves), add salt and pepper to taste, steam or cook on teflon without oil (or with minimum oil)
- Put slices of vegan cheese, boiled potato, and chopped raw broccoli on the prepared scramble
- Cover with herbs and salt, sprinkle with oil. Bake in the oven for 25 min at 360 °F
