Ingredients:

  • Egg - 100 g (2 pcs)
  • Spinach - 20 g
  • Salt and pepper - 0.3 g (1 pinch)
  • Tomato - 100 g (1 whole)
  • Mixed herbs - 5 g (1 tbsp)
  • Broccoli - 50 g
  • Potato, boiled - 135 g
  • Hard vegan cheese - 60 g

How to make:

  1. Scramble 2 eggs, add chopped tomato and spinach (5-8 leaves), add salt and pepper to taste, steam or cook on teflon without oil (or with minimum oil)
  2. Put slices of vegan cheese, boiled potato, and chopped raw broccoli on the prepared scramble
  3. Cover with herbs and salt, sprinkle with oil. Bake in the oven for 25 min at 360 °F
