Ingredients:

  • Egg - 100 g (2 whole)
  • Olive oil - 10 ml (2 tsp)
  • Butter - 5 g (1 tsp)
  • Onion - 50 g
  • Tomato - 100 g
  • Parmesan cheese - 25 g
  • Bell pepper - 100 g
  • Greens - 15 g
  • Corn grits - 50 g

How to make:

  1. Preheat the oil and simmer the chopped onion and pepper
  2. Add the chopped tomatoes, mix and pour with the eggs
  3. Cover with a lid, cook until the eggs are set
  4. Sprinkle with chopped herbs
  5. Cook the corn groats in water, add butter
  6. Sprinkle with grated parmesan
