Smoked Tofu with a Carrot Salad

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 10 ml (2 tsp)
  • Carrot - 240 g (2 whole)
  • Sesame seeds - 10 g (1 tbsp)
  • Fresh parsley, chopped - 10 g (2 tbsp)
  • Honeydew melon - 130 g
  • Tofu, smoked - 150 g
  • Buckwheat noodles, cooked - 80 g

How to make:

  1. Peel and grate roughly the carrots. Finely chop the parsley, and combine with the carrots in a bowl
  2. In a small bowl combine the lemon juice and olive oil with a pinch of salt and pepper. Pour the dressing over the carrots and sprinkle over the sesame seeds
  3. Serve the carrot salad with smoked tofu sliced into strips and cooked buckwheat noodles
  4. For fruit assortment: slice honeydew melon and serve for dessert
