Ingredients:
- Egg - 150 g (3 pcs)
- Spinach - 20 g (1 cup)
- Parsley - 5 g (1 tbsp)
- Olive oil - 5 ml (1 tsp)
- Tomato - 180 g
How to make:
- Whisk the eggs in a bowl. Roughly chop the spinach and remove the stalks, then add to the eggs with the chopped tomato and chopped parsley
- Heat a skillet over a medium heat and add a little oil
- Pour the mixture in and cook until it has firmed up. Turn it over and cook for 2-3 minutes the other side. Serve
