Ingredients:
- Spinach - 135 g (4.5 cup)
- Olive oil - 5 ml (1 tsp)
- Pumpkin seeds - 30 g (3 tbsp)
- Hard vegan cheese - 260 g
- Keto bread - 120 g
How to make:
- Grate the vegan cheese
- Steam the spinach if using fresh, or defrost 1/2 cup spinach if using frozen
- Toast the vegan bread, then add the spinach and grated cheese and cook under a medium-heat grill until the cheese has melted
- Drizzle a little olive oil over the toast and sprinkle pumpkin seeds on top
