Ingredients:

  • Spinach - 135 g (4.5 cup)
  • Olive oil - 5 ml (1 tsp)
  • Pumpkin seeds - 30 g (3 tbsp)
  • Hard vegan cheese - 260 g
  • Keto bread - 120 g

How to make:

  1. Grate the vegan cheese
  2. Steam the spinach if using fresh, or defrost 1/2 cup spinach if using frozen
  3. Toast the vegan bread, then add the spinach and grated cheese and cook under a medium-heat grill until the cheese has melted
  4. Drizzle a little olive oil over the toast and sprinkle pumpkin seeds on top
