Ingredients:

  • Olive oil - 10 ml (2 tsp)
  • Onion - 50 g
  • Sweet potato - 200 g
  • Parmesan cheese - 20 g
  • Broccoli - 100 g
  • Chicken fillet - 150 g

How to make:

  1. Wash the sweet potato, do not remove the skin, bake in the oven for 40–50 minutes at 350°F
  2. Preheat 1 tsp olive oil, simmer the onion and chopped chicken fillet
  3. Boil the broccoli for a couple of minutes in lightly salted water
  4. Cut the cooked sweet potato into 2 halves, scoop out the inside, leaving 1 cm of potato
  5. Mix the inside of the sweet potato with the broccoli, cooked onion, chicken fillet and 1 tsp oil. Sprinkle with grated cheese
  6. Bake the sweet potato boats for 10–15 minutes in the oven
