Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 15 ml (3 tsp)
  • Avocado - 210 g (1.5 whole)
  • Avocado oil - 5 ml (1 tsp)
  • Pumpkin seeds - 12 g (1 tbsp)
  • Baby spinach - 40 g (2 cup)
  • Low carb bread - 40 g

How to make:

  1. Toast the bread
  2. De-seed and peel the avocado and slice
  3. Place the sliced avocado on the toast, drizzle with the avocado oil and lemon juice, sprinkle some black pepper and sea salt and the pumpkin seeds
  4. In a separate bowl mix the dressing ingredients with a little salt and pepper
  5. Dress the spinach leaves and serve with the avocado toast
