Ingredients:

  • Olive oil - 15 ml (1 tbsp)
  • Lemon juice - 10 ml (2 tsp)
  • Tofu - 325 g
  • Green bell pepper - 320 g (2 whole)
  • Zucchini, medium - 480 g
  • Green salad - 100 g
  • Vegan pesto - 35 g (2.5 tbsp)

How to make:

  1. Slice the zucchinis longways and brush with olive oil
  2. Place under the grill for 7-10 minutes
  3. Mix the olive oil and lemon juice
  4. Place the salad on the plate and pour over the dressing
  5. Serve with the courgettes, tofu and vegan pesto
