Ingredients:

  • Olive oil - 23 ml (1.5 tbsp)
  • Cherry tomato - 140 g (1 cup)
  • Lemon juice - 15 ml (3 tsp)
  • Salt and pepper - 0.3 g (1 pinch)
  • Parsley, chopped - 10 g (1 tbsp)
  • Edamame bean - 180 g
  • Brown rice - 160 g
  • Spring onion - 8 g

How to make:

  1. Cook the brown rice in two parts salted water for approximately 20-25 minutes, or until tender
  2. Drain the edamame beans if using canned, or thaw if using frozen. Chop the sweet peppers, slice the cherry tomatoes in half, finely chop the spring onion and parsley
  3. In a small bowl combine the lemon juice, olive oil and salt and pepper and mix
  4. Combine all ingredients in a serving bowl, pour over the dressing and serve
