  • Salt - 0.3 g (1 pinch)
  • Olive oil - 15 ml (1 tbsp)
  • Lime juice - 10 g (2 tsp)
  • Avocado - 58 g
  • Cumin - 0.3 g (1 pinch)
  • Corn tortilla - 50 g
  • Chicken breast, boneless, skinless - 85 g
  • Onion, sliced - 40 g
  • Red bell pepper, sliced - 90 g (1 cup)
  • Pinto beans, canned and drained - 130 g

How to make:

  1. Mix together the olive oil, lime juice, cumin and salt in a bowl and marinate the chicken for about 20 minutes in the refrigerator
  2. Once the chicken is marinated heat a pan over medium heat add the chicken and cook for about 8 minutes on each side. Set the chicken aside and slice chicken into strips
  3. Add the bell pepper and onions to the pan. Stir often for about 5 minutes. Serve with warmed tortillas
  4. Heat beans in a microwave safe bowl for 1 minute. Avocado serve on the side
