Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Zucchini - 170 g
  • Lemon juice - 15 ml (1 tbsp)
  • Arugula - 50 g
  • Salt and pepper - 0.3 g (1 pinch)
  • Cheddar cheese - 22 g
  • Pine nut - 40 g
  • Chicken fillet - 70 g

How to make:

  1. Cut the zucchini lengthwise, cook on the griddle or in a pan with oil
  2. Bake chicken in the oven at 400 °F for 20 minutes
  3. Place grilled zucchini in a large bowl, place chicken pieces on top, cover with arugula. Sprinkle with shredded cheddar and lemon juice
