Ingredients:
- Salt - 0.3 g (1 pinch)
- Olive oil - 15 ml (1 tbsp)
- Lime juice - 10 g (2 tsp)
- Avocado - 58 g
- Cumin - 0.3 g (1 pinch)
- Corn tortilla - 50 g
- Chicken breast, boneless, skinless - 85 g
- Onion, sliced - 40 g
- Red bell pepper, sliced - 90 g (1 cup)
- Pinto beans, canned and drained - 130 g
How to make:
- Mix together the olive oil, lime juice, cumin and salt in a bowl and marinate the chicken for about 20 minutes in the refrigerator
- Once the chicken is marinated heat a pan over medium heat add the chicken and cook for about 8 minutes on each side. Set the chicken aside and slice chicken into strips
- Add the bell pepper and onions to the pan. Stir often for about 5 minutes. Serve with warmed tortillas
- Heat beans in a microwave safe bowl for 1 minute. Avocado serve on the side
