Stuffed “Three Cheese” Peppers

  • Egg - 50 g (1 pcs)
  • Spinach - 30 g (1 cup)
  • Mozzarella - 25 g
  • Ricotta - 65 g
  • Parmesan cheese - 35 g
  • Bell pepper - 100 g (0.5 whole)
  • Pecan nut - 28 g
  • Garlic powder - 3 g (1 tsp)

How to make:

  1. Preheat the oven to 350 °F
  2. Cut the pepper in half, remove the seeds
  3. Combine cheese, eggs and garlic powder in a blender or food processor
  4. Stuff pepper halves with the mixture, top with spinach and lightly press down with a fork
  5. Wrap peppers in aluminum foil, bake for 30-35 minutes
  6. Take bell peppers out of the oven, remove the aluminum foil. Sprinkle peppers with chopped nuts before serving
