Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Lemon juice - 30 ml (2 tbsp)
  • Honey - 5 g (1 tsp)
  • Baking powder - 4 g (1 tsp)
  • Whole-wheat flour - 105 g (0.9 cup)
  • Berries of choice - 100 g
  • Banana - 70 g
  • Tofu - 100 g
  • Coconut flakes - 10 g (2 tsp)

How to make:

  1. Mash tofu with a fork until crumbly or use tofu that is already crumbly. Mash banana with a fork or add to a blender and pulse until smooth. Then add to the tofu
  2. Combine tofu, honey, flour, baking powder. Zest half a lemon and add to the mixture
  3. Squeeze about two tablespoons of lemon juice and stir well. If the mass is too watery, add a little more flour, too loose - add a couple of tablespoons of water. Divide the dough mass into equal pieces and shape balls
  4. Dredge the balls in flour and slightly flatten each ball into thick patties. Heat the pan over medium heat and add oil. Cover the pan and fry tofu balls until golden brown, about 3-4 minutes on each side
  5. Blend berries in a blender until smooth, pour the resulting mixture over the tofu balls and sprinkle with coconut flakes
