Ingredients:

  • Red onion - 30 g (0.3 whole)
  • Spinach - 30 g (1 cup)
  • Arugula - 20 g (1 cup)
  • Turmeric - 0.3 g (1 pinch)
  • Salt and pepper - 0.3 g (1 pinch)
  • Tomato - 100 g (1 whole)
  • Whole-wheat toast - 100 g
  • Tofu - 110 g
  • Avocado - 60 g
  • Mixed herbs - 0.3 g (1 pinch)
  • Garlic powder - 0.3 g (1 pinch)
  • Ginger powder - 0.3 g (1 pinch)

How to make:

  1. Finely chop onion, add all the spices, cover the pan with a lid and simmer for a couple of minutes with 2 tbps. of water
  2. Chop spinach, add to the pan and cook for 1-2 minutes. Shred tofu (or use crumbly tofu), add to the pan and cook for a couple of minutes
  3. Top a piece of toast with a slice of tomato, avocado, and arugula. Place the remaining tomato with the omelet when serving
