Ingredients:
- Salt - 0.3 g (1 pinch)
- Olive oil - 5 ml (1 tsp)
- Garlic clove - 3 g (1 pcs)
- Whole-wheat toast - 50 g
- Tofu - 70 g
- Leek - 100 g
- Pumpkin seeds - 15 g (1.5 tbsp)
- Green peas - 100 g (0.7 cup)
How to make:
- Rinse peas, add water, and cook until soft
- When peas are almost ready, cut leeks into thin rings (the whole white and light green parts). Cover the pan with a lid and fry in olive oil. Chop garlic and add to onion
- Combine all the ingredients with cooked peas in a blender, salt, and blend until pureed
- Serve with toast, sprinkled with seeds and topped with chopped tofu
