Ingredients:

  • Salt - 0.3 g (1 pinch)
  • Eggplant - 100 g
  • Olive oil - 5 ml (1 tsp)
  • Onion - 30 g (0.3 whole)
  • Soy sauce - 5 ml (1 tsp)
  • Bell pepper - 50 g (0.25 whole)
  • Tofu - 60 g
  • Ginger - 0.3 g (1 pinch)

How to make:

  1. Wash eggplant, cut it into 1 cm thick slices, season with salt and set aside for 15 minutes
  2. Cut bell pepper, tofu, and onion into strips. Rinse the eggplant. Heat a frying pan with a little oil and add the vegetables with tofu, fry for 3-5 minutes
  3. Pour ginger-soy sauce over the vegetables, season with spices and sauté for another 1-2 minutes
