Ingredients:
- Spinach - 30 g (1 cup)
- Olive oil - 5 ml (1 tsp)
- Zucchini - 100 g
- Onion - 30 g (0.3 whole)
- Potato - 200 g
- Salt and pepper - 0.3 g (1 pinch)
- Hummus - 180 g (0.7 cup)
How to make:
- Peel potatoes and grate together with zucchini on a coarse grater, squeeze out excess moisture. Place onion and spinach in a blender and blend until smooth. Mix all the ingredients together
- Meanwhile, heat olive oil in a pan over medium heat
- Add the mixture to the pan and spread in a thin layer using a fork to make it even. Let it fry a few minutes until brown and turn the pancake over with a large spatula
- Serve with hummus on top
