Ingredients:

  • Spinach - 30 g (1 cup)
  • Olive oil - 5 ml (1 tsp)
  • Zucchini - 100 g
  • Onion - 30 g (0.3 whole)
  • Potato - 200 g
  • Salt and pepper - 0.3 g (1 pinch)
  • Hummus - 180 g (0.7 cup)

How to make:

  1. Peel potatoes and grate together with zucchini on a coarse grater, squeeze out excess moisture. Place onion and spinach in a blender and blend until smooth. Mix all the ingredients together
  2. Meanwhile, heat olive oil in a pan over medium heat
  3. Add the mixture to the pan and spread in a thin layer using a fork to make it even. Let it fry a few minutes until brown and turn the pancake over with a large spatula
  4. Serve with hummus on top
