Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Cherry tomato - 50 g (3 pcs)
  • Lemon juice - 30 ml (2 tbsp)
  • Quinoa, dry - 100 g (0.6 cup)
  • Sweet potato - 150 g
  • Tofu - 50 g
  • Lettuce - 50 g
  • Cashew nut - 5 g
  • Sunflower sprouts - 5 g (0.5 tbsp)

How to make:

  1. Boil quinoa until tender
  2. Cut sweet potato into 1 cm-thick slices. Fry in a grill pan or bake in the oven with olive oil
  3. Put lettuce leaves on a plate. Add cooked quinoa on top, followed by a layer of tomatoes (cut in half) and sunflower sprouts
  4. Mix olive oil and lemon juice
  5. Add chopped tofu and cashews on top
