Ingredients:

  • Olive oil - 5 ml (1 tsp)
  • Onion - 50 g (0.5 whole)
  • Garlic clove - 3 g (1 pcs)
  • Arugula - 30 g (1 cup)
  • Oregano - 0.3 g (1 pinch)
  • Salt and pepper - 0.3 g (1 pinch)
  • Tomato - 100 g (1 whole)
  • Whole-wheat spaghetti - 80 g
  • Soy meat, dry - 135 g

How to make:

  1. Cut onion into small cubes and chop garlic
  2. Pour olive oil into a saucepan or deep pan. Add chopped onion and garlic
  3. Cut tomato into small cubes and add to the pan. Cover the pan and simmer until the tomato reaches a mash consistency
  4. Add soya mince (or dry pieces of soy meat) to the tomato and onion. It will absorb excess water and become very similar to fried minced meat. If the mixture turns out very thick, you can add a couple of tablespoons of water
  5. Season with salt, oregano, and fresh black pepper. Let sit with the lid closed while spaghetti is boiling. Place the cooked spaghetti on a plate, top with slices of soy meat in the sauce and add greens
