Ingredients:
- Spinach - 25 g (1 cup)
- Corn - 100 g (0.6 cup)
- Carrot - 50 g (0.5 whole)
- Orange - 100 g
- Hummus - 140 g (0.6 cup)
- Cashew nut - 20 g
- Whole wheat tortilla - 130 g
How to make:
- Peel and grate carrot on a coarse grater, chop cashews
- Spread hummus over tortilla, put spinach, carrot, cashews in the centre, and sprinkle with corn. The filling should take up half of the tortilla
- Wrap the tortilla up in a tight roll, working from bottom to top
- Eat an orange for dessert
