Ingredients:

  • Spinach - 25 g (1 cup)
  • Corn - 100 g (0.6 cup)
  • Carrot - 50 g (0.5 whole)
  • Orange - 100 g
  • Hummus - 140 g (0.6 cup)
  • Cashew nut - 20 g
  • Whole wheat tortilla - 130 g

How to make:

  1. Peel and grate carrot on a coarse grater, chop cashews
  2. Spread hummus over tortilla, put spinach, carrot, cashews in the centre, and sprinkle with corn. The filling should take up half of the tortilla
  3. Wrap the tortilla up in a tight roll, working from bottom to top
  4. Eat an orange for dessert
